Violet sorbet

Princess Sissi's favourite dessert! Prepared with a fruity rosé and dried flowers, the violet sorbet carries on its magic.

Ingredients

Dessert For 4 people

3 l of fruity rosé

4 l of water

150 g of sugar

6 tablespoons of dried violets, for sale in the grocery store

1 egg white

violets to decorate

How to proceed

Preparation:

approx. 15 minutes

Freezing:

approx. 4 hours

Total time:

4 h 15 min

Bring the wine to a boil with water, sugar and violets. Simmer over low heat for about 5 minutes. Let the violet syrup cool and strain it. Whip the egg white and mix it with the violet syrup.

Pour the syrup into a chrome steel bowl and place in the freezer for approx. 4 hours. Every 30 minutes, mix the sorbet with a whisk. Spread the sorbet into the glasses with a spatula.
